Simple Nigerian Stew

Stew is a Nigerian term for tomato sauce or paste base that can be eaten along side any brand of rice, pasta or roots (potatoes and yams). It is a versatile dish that every Nigerian ought to be an expert in preparing this. There are so many ways different tribes in Nigeria prepare this dish. Some use either fresh peppers, fresh tomatoes or puree, while some combine all three. Regardless of your choice, there are indigenous ingredients that must be present. Also, the kind of meat preferred is also optional. The most exciting part of this dish are the unique taste, easy recipe and short cooking time (No one likes to spend a century in the kitchen). What's the difference between being hungry and horny? Where you put the cucumber. (PG 18.) Cucumbers never tasted better than these delicious appetizer of mine. Usually, people would crave crackers and any kind of topping. On this very lazy day, I wanted something quick to serve a guest, cucumber and baked salmon flashed through my mind and I made it happen. Sometimes we have to learn to divert from the usual menu and try being innovative. It's a great feeling to actualize a dream or an imagination. If your boyfriend isn't treating you right, let that MANGO! If I were to tell you just one reason why I love cooking, I'd say it's the unpredictability. The day i'll give up this passion of mine would be whenever cooking becomes a run off the mill, which we all know is impossible. Not with the burst of color, the chime sounds of frying, the bubbly boil, and the aromatic vapor. These constituents of cooking makes me want to always explore hence, Chicken Mango Stir-Fry. With mango being my favorite fruit, I just had to push the love a little further. The mangoes can be replaced with pineapples if you wish. Pancake w/ Warm Blueberry Sauce

Did you hear about the angry pancake? He just flipped.  The word "Fluffy" finally has a visual meaning to me, thanks to these delicious pancakes. My first experience with pancake (frozen kind) wasn't such a memorable one, until I was treated to lunch at IHOP by my best friend. Comparing the events, I noticed the difference was mostly about the fluffiness. Not only that, IHOP is famous for their eye catching presentation. Pancakes are just plain fried batter that without toppings, are far from delicious (my opinion). It is recommended to get super creative with toppings and presentation while serving. I always adhere to the philosophy of "feed the eyes before the mouth". Although it doesn't guarantee that every well garnished meal is delicious, but it depicts a well thought out and executed plan.
