Pancake w/ Warm Blueberry Sauce

Did you hear about the angry pancake? He just flipped. 

The word "Fluffy" finally has a visual meaning to me, thanks to these delicious pancakes. My first experience with pancake (frozen kind) wasn't such a memorable one, until I was treated to lunch at IHOP by my best friend. Comparing the events, I noticed the difference was mostly about the fluffiness. Not only that, IHOP is famous for their eye catching presentation. Pancakes are just plain fried batter that without toppings, are far from delicious (my opinion). It is recommended to get super creative with toppings and presentation while serving. I always adhere to the philosophy of "feed the eyes before the mouth". Although it doesn't guarantee that every well garnished meal is delicious, but it depicts a well thought out and executed plan. It is also evocative of individual color representation. I really hope to exceed your expectation with this plate of "delicious fluffiness".

Pancake w/ Warm Blueberry Sauce.




Ingredients.







































Warm Blueberry Sauce:

  • One cup of blueberry
  • One cup of blackberry
  • 3-4 Strawberries 
  • One cup of water 
  • 1/2 teaspoon of vanilla extract or vanilla sugar
  • 1 1/2 tablespoon of cornstarch dissolved into 3 tablespoons of water

Pancake:

  • Bisquick pancake mix
  • Syrup
  • One glass of milk
  • 2 Eggs
  • 2 Tablespoons of olive oil 
  • Salt to taste (optional).

Prep:

  • Wash both hands properly
  • Wash the berries and set aside in a clean plate
  • Measure out the sugar, salt, olive oil, and milk needed
  • Dissolve the cornstarch and milk in water separately and set aside
  • Beat the eggs.
Directions: Pancake.
  • Pour two cups of bisquick mix into a clean bowl, add the glass of milk, egg, olive oil and whisk until there's no visible lump (don't worry about one or two :) ). If the batter seem too thick, add more dissolved milk.





  • Heat a large skillet or griddle over medium-low heat. Brush the skillet with a teaspoon of oil each time you are ready to fry the batter.


  • When the oil slightly shimmers, ladle batter onto the skillet, making pancakes of any size you desire. I used a measuring cup to control my size. This helps with flipping.



  • Adjust heat as necessary; the first batch will require higher heat than subsequent batches. Flip pancakes after bubbles starts to rise on the surface and bottom is brown after 2 - 3 mins. Cook until the flip side is lightly browned. 
  • Repeat for the rest of the batter.



  • Set aside and prepare for the warm blueberry sauce.



Directions: Warm Blueberry Sauce.
  • Place a medium cooking pan on  medium-high heat and add a glass of water. Bring to boil, add the berries, vanilla, sugar and stir. After 5 minutes, add the dissolved corn starch and bring to boil. 


  • Stir continuously to avoid burning. Once it starts to bubble and thickens up, your blueberry sauce is ready. You can allow it to cool or make it faster by placing it in the refrigerator for 5 minutes


  1. Serving: Pancake w/ Warm Blueberry Sauce

  • Place the pancakes in a serving plate and pour the warm berry on top. garnish using strawberry slices and pancake syrup.






  • Enjoy that fluffy deliciousness with a glass of water or orange drink.
