Simple Nigerian Stew

Stew is a Nigerian term for tomato sauce or paste base that can be eaten along side any brand of rice, pasta or roots (potatoes and yams). It is a versatile dish that every Nigerian ought to be an expert in preparing this. There are so many ways different tribes in Nigeria prepare this dish. Some use either fresh peppers, fresh tomatoes or puree, while some combine all three. Regardless of your choice, there are indigenous ingredients that must be present. Also, the kind of meat preferred is also optional. The most exciting part of this dish are the unique taste, easy recipe and short cooking time (No one likes to spend a century in the kitchen). Let me teach you how to prepare a pot of stew in 20 mins (excluding prep time) and have your stomach emitting butterflies (I'm serious as a heart attack). 

Pork Neck Stew.

Ingredients.




  • 3 Cups of olive or vegetable oil
  • One medium onions finely chopped. (if preferred or in chunks)
  • Pork Neck or any choice of meat
  • 1 Sprig of thyme and rosemary leaf (herbs)
  • 1 Tablespoon of basil spice
  • 10 Fresh tomatoes
  • 2 Tablespoons of crayfish (grounded shrimp can suffice)
  • 1 Stock cube (chicken or beef)
  • 4 - 5 Red bell peppers
  • 3 Scotch bonnet or habaneros
  • Salt to taste.

Prep:

  • Wash both hands properly
  • Wash the meat and prepare to cook
    • Add the meat to a medium sized pot, add salt, meat tenderizer and cook for 30mins.
    • Pour the broth into a clean hollow plate, allow to cool and set aside
  • Roughly cut the bell peppers, scotch bonnet, onions and blend
  • Wash the fresh tomatoes, dice and bring to boil on medium heat (do not add water). The purpose of boiling is to desiccate the tomatoes. 
    • Cook for 10mins, allow to cool and blend to make tomato puree.
Directions: Pork Neck Stew.
  • Heat a large cooking pot over high heat and add 3 cups of olive or vegetable oil. Once the oil is hot, add onions and fry till golden brown
  • Add the cooked meat and fry for 2 mins, pour the blended pepper, tomato puree (boiled tomato), and bring to boil for 15mins (the mixture starts to bubble)
  • Add the stock cube, herbs, crayfish and salt
  • Adding the broth is contingent upon the consistency required
    • Add broth if you think the sauce is too thick
  • Taste for seasoning, cook for an extra 3 mins and your stew is ready to be served!
Serving:Pork Neck Stew with Rice
  • Scoop the rice with a serving spoon into a clean bowl, dish the stew and place on top of the rice, by the corner or in a different serving bowl
  • Garnish the rice with shreds of parsley (optional).
  • Serve with a glass of water or your favorite drink/juice.
