Chicken Mango Stir-Fry

If your boyfriend isn't treating you right, let that MANGO!

If I were to tell you just one reason why I love cooking, I'd say it's the unpredictability. The day i'll give up this passion of mine would be whenever cooking becomes a run off the mill, which we all know is impossible. Not with the burst of color, the chime sounds of frying, the bubbly boil, and the aromatic vapor. These constituents of cooking makes me want to always explore hence, Chicken Mango Stir-Fry. With mango being my favorite fruit, I just had to push the love a little further. The mangoes can be replaced with pineapples if you wish. The recipe is easy to find, cooking is fast and taste is fabulous. Let's get to work foodies :).


Chicken Mango Stir-Fry with Rice.

Less than 45mins and lunch is on the table - full of healthy and palatable ingredients. The fried mango combined with herbs and spices can only turn out to be one thing, Yum yum and yum. Don't forget we are still in the summer, so it's okay to stay COLORFUL.

Ingredients.



  • 450g of Chicken (one leg quarter) - I used the baked chicken that I had in my refrigerator.
  • Mango coconut sauce
  • One medium onion
  • Half slice of red and green bell pepper
  • 1 Tbsp of each herb (basil,parsley, oregano)
  • 4 Tbsp of olive or vegetable oil
  • Minced garlic or 1 garlic clove
  • Ginger
  • 2 Ripe mangoes
  • 3 Habaneros
  • One stock cube
  • Rice/Noodles to serve

Prep:

  • Wash both hands properly
  • Wash the chicken and slice into chunks if it's not already prepared
  • Add a pinch of salt to the chicken, steam for 10mins and set aside
  • Finely cut the bell peppers, ginger, habanero and onions
  • Slice the mangoes into cubes blend a cup
  • Measure out the suggested condiments.

Directions: Stir-Fry.
  • Heat a large cooking pot over high heat and add 4 Tbsp oil. Once the oil is hot, add onions, bell pepper,herbs, habanero simultaneously and fry until golden brown. 
    • Add the steamed chicken after 3 mins of frying your veggies.

  • Add 2 tbsp of mango coconut sauce, minced garlic, ginger and stir




  • Add the mango cubes, baked chicken (if using that), bring to simmer, stir and add the parsley. 

  • Add stock cube, a pinch of salt and taste
  • Cook for one minute and your mango stir-fry is ready to be served!
  • Dish into a serving plate


Serving: Chicken Mango Stir-Fry with Rice
  • Scoop the rice with a serving spoon into a clean bowl, dish the stir fry and place on top of the rice or by the corner.
  • Serve with a glass of water or your favorite drink/juice.
