Cucumber and Salmon Appetizer

What's the difference between being hungry and horny? Where you put the cucumber. (PG 18.)

Cucumbers never tasted better than these delicious appetizer of mine. Usually, people would crave crackers and any kind of topping. On this very lazy day, I wanted something quick to serve a guest, cucumber and baked salmon flashed through my mind and I made it happen. Sometimes we have to learn to divert from the usual menu and try being innovative. It's a great feeling to actualize a dream or an imagination. Before we proceed, I hope you can pronounce "Salmon"? hahahaha, the "L"is silent :)

Cucumber and Salmon Appetizer.

Less than 45mins and your appetizer is ready! - full of healthy and refreshing ingredients. The juicy salmon combined with the crunchy cucumber would leave you dancing salsa. Don't forget we are still in the summer, so it's okay to to play with colors in the kitchen.

Ingredients.


Cherry tomatoes
  • One or two Salmon fillet
  • One Cucumber
  • One sprig of rosemary and basil leaf
  • Half slice of red and green bell pepper or sweet peppers
  • 1 Tbsp of Oregano
  • 4 Tbsp of olive or vegetable oil
  • Minced garlic or 1 garlic clove
  • Half Lime
  • Mayonnaise
  • 3 Habaneros
  • One stock cube
  • Black pepper
  • Old bay (fish seasoning)
  • Cherry tomato (for garnishing)
  • Salt and Pepper to taste.
Prep:
  • Wash both hands properly
  • Wash the salmon and spice using a mix of olive oil, oregano, salt, pepper and squirts of lime all over it


  • Finely cut the bell peppers, slice the cucumbers into circular shape


Directions: Salmon.

  • Preheat oven to 375 degrees F (190 degrees C). 
  • Place the seasoned fillets in a greased aluminum foil, place in the oven and bake 25 - 30 mins, until easily flaked with a fork or use an instant thermometer to check for doneness. The USDA recommends a minimum internal temperature of 145°F, which should be measured at the thickest part of the fillet.

Directions: Cucumber and Salmon Appetizer.
  • Place the baked salmon in a clean plate and mash using a potato masher or a fork.
  • Add diced bell peppers, mayo, a pinch of salt(optional), black pepper and mix

  • Place the sliced cucumber on a clean flat plate, scoop the salmon mixture on top of each and garnish using half sliced cherry tomato.
