Oven Baked Barbecue Chicken

Did I invite you to the Barbecue? Then why are you all up in my grill? LOL.

Just like the oven baked barbecue ribs, the chicken is equally worth having in your summer bucket list! If you don't have any downtime to invest in the wait period involved in baking the ribs, I think this would a better choice for you. Ever had chicken so good that the spices are well balanced out and completely absorbed? You'd experience that vicariously after reading this post. Baking low and slow is the secret! Oven baked chicken is relatively easy - all you need is 95% recipe and 5% waiting time which could be fun over snacking or watching your favorite Tv show. Just keep an eye in the kitchen. Once you try this recipe, you'd never underestimate the power of a well baked chicken.

Oven Baked Barbecue Chicken.


 Ingredients.







  • 1/2 Tablespoon of olive or vegetable oil for greasing
  • One medium onions
  • 6 Pieces of chicken leg quarters
  • Barbecue and Jerk sauce (homemade), but feel free to use your favorite brand if you wish.
  • 1/2 Cup of soy sauce
  • 2 Tablespoons of brown sugar
  • 1 Tablespoon of oregano and basil spice
  • 2 Sprigs of thyme and rosemary leaves
  • 1/4 cup of apple cider vinegar
  • 1 Stock cube (chicken or beef)
  • One red bell pepper
  • 3-4 Red chilli or Habanero pepper
  • 2 Tablespoons of hot sauce
  • 1 Tablespoon of garlic
  • 1 Tablespoon of nutmeg and cinnamon
  • Ginger
  • One Lime
  • Scallions
  • Salt to taste.

Prep:

  • Wash both hands properly
  • Properly clean the chicken, cut open, salt and set aside.
    • A well cleaned chicken should not have blood water deposit when left undisturbed in a bowl, maybe a little but not bloody.
  • Chop the peppers,onions, ginger and scallions (3 sprigs of scallions is recommended)
  • Measure the quantity of condiments needed (spices and sauce)
  • Juice the lime using a manual lime squeezer

  • Prepare to make the barbecue and jerk sauce if that's your preference
Jerk Sauce (Homemade)

  • In a food processor, add the soy sauce, lime juice, thyme and rosemary leaves, scallions, Habaneros, nutmeg, cinnamon, ginger, garlic, soy sauce and blend until a smooth texture is reached.

























  • Pour into a large clean bowl and set aside
  • Marinade the chicken using the sauce
    • Do not use all of the jerk sauce as this would serve as an ingredient in preparing your barbecue sauce.

Directions: Marinade.
  • Place the large bowl of sauce on a balanced surface, dip each chicken into the jerk sauce ensuring that it is well absorbed. Place the marinated chicken in a ziplock and allow to seat for 2 hours.

Note: Usually, I would marinate these chicken for up to 12 hours before cooking time. In this situation,I forgot to do that the previous day and refrigerate overnight hence, the crash time. Despite the timing, If the right amount of spices are added and well massaged in, your chicken would turn out delicious! 

Barbecue Sauce(Homemade)
  • Place a small pot on medium-low heat and add your remaining jerk sauce, soy sauce, hot sauce, lime juice, cinnamon, nutmeg, vinegar, brown sugar, bring to boil and stir continuously. 
    • Brown sugar balances out the acidic ingredients
  • Once it starts to sweat or you notice the bubbles, turn off the heat and your barbecue sauce is ready.
  • Pour into a clean bowl and allow to cool



Baking.
  • Pre heat the oven at a temperature of 350 degree celsius
  • Sit the marinated chicken on a greased baking pan and place into the oven
  • Allow to bake for 30 mins undisturbed
  • Remove from the oven and glaze both sides with the barbecue sauce,bake for an extra 20mins. 
    • If you notice your chicken is drying up, use a baster to release the broth in order to moisten the chicken
  • Your chicken is ready to be garnished

Note: Salmonella is a food borne bacteria that is responsible for over 1.2 million cases of illness and 450 deaths each year. It is largely found in raw poultry however, when properly cooked its safe but if undercooked it can lead to "trouble".


Serving: Oven Baked Barbecue Chicken.
  • Place the chicken on a clean serving plate and garnish with lemon, scallions and red chilli pepper
  • Enjoy your happiness on a plate with a glass or orange or pineapple drink, or even water.
