Oven Baked Barbecue Ribs

Oven baked barbecue ribs is worth having in your summer bucket list! Mine was crossed out yesterday and I am so excited to share the recipe with my beautiful foodies. Ever had ribs so good that it falls off the bone and melts in your mouth? You'd experience that vicariously after reading this post. Baking low and slow is the secret! Oven baked rib is relatively easy - all you need is 95% recipe and 5% waiting time which could be fun over snacking or watching your favorite Tv show. Just keep an eye in the kitchen. Once you try this recipe, you'd be addicted to baked ribs :).

Oven Baked barbecue Ribs.
Ingredients.
- 1/2 tablespoon of olive or vegetable oil for greasing
- One medium onions
- One rack of pork ribs
- Barbecue and Jerk sauce
- 2 Stalks of celery
- 1 Tablespoon of oregano and basil spice
- 1 Tablespoon of paprika for reddening
- 1 Stock cube (chicken or beef)
- One red bell pepper
- 2 Pounds golden baby potatoes
- Ginger
- Cauliflower
- Salt to taste.
Prep:
- Wash both hands properly
- Rinse the baby potatoes and poke hole in each of them using a fork (This allows for spices and the rib juice to be easily absorbed)
- Rinse off the ribs and set aside
- Chop the bell peppers,onions, ginger and celery into medium chunks
- Measure the quantity of condiments needed (spices and sauce).
Directions: Marinade.
- Place the rib on a clean pan, rub the barbecue sauce, jerk sauce all over, drizzle the spices and add salt. Massage both sides to allow the ribs absorb all ingredients.
- Allow to sit for up to 20 minutes.
Note: Usually, I would marinade these ribs for up to 2 hours before cooking time. In this situation, I did not foresee myself making ribs for dinner on a Friday night hence, the rush. Despite the timing, If the right amount of spices are added and well massaged in, your ribs would turn out delicious! (That's how pro's do it....kidding).
Direction: Rib base.
Just as the name implies, it is basically an underlay for the ribs to rest on. The great thing is, it could also be used as a side while serving the ribs. Potatoes are one of my favorites ingredients for this purpose because they are filling and are always a good side dish. The rib juice and spices drips and is absorbed by the potatoes leaving them so delicious!
- In a greased Aluminum pan, pour in the washed baby potatoes, add the chopped bell pepper, cauliflower, celery, onions, ginger, rosemary and thyme leaves.
- Pre heat the oven at a temperature of 380 degree celsius.
- Place the marinaded ribs on top cover the pan using an aluminum foil, and toss in the oven to bake for 2 hours.
- After two hours is reached, remove from the oven protecting your hands with oven gloves
- Remove the foil and allow for steam to evaporate, allow to cool for few mins.
- Generously glaze both sides of the ribs with barbecue sauce and toss back into the oven without covering it
- Bake for another 35mins and your mouthwatering, juicy and palatable rib is ready to be served with a glass of white WINE.
Serving: Oven Baked Barbecue Ribs.
- Using a knife, cut a portion of the rib and place in a clean plate, serving the potatoes as a side dish.
- Enjoy your happiness on a plate with a glass of joy, sorry I meant white WINE.
