Spicy Cauliflower Chicken

Cauliflower is nothing but cabbage with college education - Mark Twain.

Spicy Red Sauce Chicken made from Cauliflower? You bet! This post is mainly for those foodies who have been waxing strong in their "STRICT" weight loss journey and all of a sudden starts to crave some saucy chicken. Don't panic I have an alternative for y'all including myself. I bet you wished summer body comes so easy right? I equally do.  Some folks might argue the condiments used however, it is advisable to pay close attention to the sodium level  in each of these ingredients. Low sodium level ingredients is highly recommended. Eating healthy doesn't necessarily mean you ONLY want to lose some body weight. I lean towards the part that highlights one to be aware of their health and avoid food that could be detrimental to our vital organs. Too much health jargons right? Let me save you that summer class stress and go right into business....

Spicy Red Sauce Cauliflower Chicken:

Ingredients : Cauliflower Chicken

  • One head of Cauliflower
  • 1 Tablespoon of paprika and chilli powder
  • Parsley for garnishing
  • One stock cube
  • Simply organic herb mix (oregano, rosemary, and sage) or any affordable kind.
  • 1/4 cup of all purpose flour
  • 1 Teaspoon of black pepper
  • 2 Tablespoons of spicy pot sauce (This is for those that want it really hot. You could substitute this one red hot wings sauce or any mild red hot sauce).
  • 2 Tablespoons of Barbecue sauce (for my foodies who would prefer barbecue sauce to red hot sauce).
  • Ranch dip.
  • Salt to taste (optional).

Prep:
  • Properly wash both hands.
  • Break off the cauliflower into sizable chunks and set aside in a clean bowl.
  • Measure out the condiments and place aside.
  • Pre-heat the oven at 450 degree Celsius (map leading to the "crispy road").

Directions: Cauliflower chicken
  • Pour the flour, chilli pepper, paprika, salt or stock cube, herbs into a bowl, add 1/2 cup of water or more depending on the desired consistency. Mix thoroughly until a smooth texture is reached.

  • Pour the cauliflower chunks into the mixture and allow to marinade for about 10mins.

  • Using a cooking brush, rub this mixture on each of the cauliflower reaching the inner most corners.
  • Cover the baking pan with a parchment paper  and place the cauliflower on the clean surface. NOTE!!!!! - Do not use Aluminum foil as this would cause the cauliflower to stick on the pan. Trying to get it off might ruin this process if proper care is not applied. I fell victim to this but I found a way out...which was extreme carefulness).

  • Place it in the oven and bake for 25mins.
  • The cauliflower should be crispy at this time and ready to be bathed in spicy pot sauce or red hot sauce.

  • Using a cooking brush, rub this pot sauce/ hot sauce or barbecue sauce on each of the cauliflower reaching the inner most corners.
  • Place back in the oven and bake for 10mins and your cauliflower chicken is ready to be served.

Serving:
  • Dip the baked cauliflower chicken into the hot sauce/pot sauce or barbecue sauce
  • Place them in a clean serving bowl with a side of carrot/celery and ranch dip.
  • Garnish using parsley and enjoy your meal!
Ps: for those who are not spicy friendly, please feel free to replace red pot/hot sauce with barbecue sauce.
