Boiled Irish potatoes and Kale Veggie Sauce...

If the British Isles had an official vegetable, it would have to be the potato - Yottam Ottolenghi 

I hope no one plans to question the choice of vegetable used for this sauce. Well, some people think kale is bitter, coarse,"disgusting" but I think it is so rich in green juice which is the main purpose why veggie lovers go for it! David Katz from Yale University advised that "it is better to eat your vegetable than drink them". But if you prefer the latter to the former then go for it as it would be better than not having any at all. My Kale veggie sauce turned out so tasty  and colorful you wouldn't even believe it. Thanks to Bell peppers and other tasteful condiments that were added. I relished this sauce with some boiled Irish potatoes Now it's time for the fun part........ Kale, ready, go!!!

Ps: I didn't opt for spinach because I don't feel like eating "vegetable pepper soup". Hahahaha. Spinach contains almost 98% water. I could also decide to parboil the spinach before adding to my sauce but that would blanch my vegetable leaving me with almost nothing to gain from eating it. whats the purpose then? Spinach are awesome when making salads. 

Irish potato and kale veggie sauce





Ingredients: Potatoes

  • 4 -5 Irish potatoes .

Cooking Direction: Potatoes
  • Wash the potatoes and peel. 
  • Cut the potatoes into equal halves or leave as whole (your choice). 
  • Wash and place in a clean bowl 
  • Place a clean cooking pot on a medium heat stove and pour the washed potatoes. add enough water to cover it. 

  • Transition to high heat and cook for about 40mins. The best way to confirm your potatoes are ready is by sticking a fork in the middle. If the fork passes through it easily then it is ready else cook for another 10mins and watch closely to avoid soggy potatoes. 



  • Once the potatoes are well cooked, place in a sieve to drain excess water. 

Ingredients : Kale Veggies Sauce

  • One tablespoon of olive or vegetable oil.
  • One medium onions finely chopped. (if preferred or in chunks).
  • Half cup of shrimps.
  • 1/2 cup of grounded crayfish.
  • Kale.
  • 1 tablespoon of paprika.
  • 2 Dried fish or Stockfish.
  • 2 fresh tomatoes.
  • 1 Red and Green bell pepper.
  • 2  stock cubes (chicken or beef).
  • 2 habaneros or more if you love spicy food.
  • 1 sweet red pepper for garnishing.
  • Salt to taste.


Shrimps


Kale and Fresh tomatoes
Prep: 
  • Properly wash both hands.
  • Slice the onion, tomatoes,red and green into fine cubes.
  • Parboil the shrimps for 15mins. Peel off the hard skin after boiling. 
  • Finely slice the kale and set aside. (I did not by the already sliced kale because they come in big chunks that only look good in salads).
  • Soak the dried in hot water for 15mins prior to cooking the potatoes. once they are soft, remove the mid bone and clean properly to get rid of sand and dirts. 
  • If you are using stockfish, cook them for 35mins while boiling the potatoes. This is a form of multitasking that saves a good amount of time in the kitchen. 




Directions: Kale Veggies Sauce
  • Set a medium sized pot on a low heat and add vegetable/olive oil. 
  • After 5 - 7 mins, gently add your finely chopped onion, red and green peppers, sliced habanero simultaneously, increase the heat and stir. cover for about 4mins and watch closely. 
  • Add the crayfish, stockfish or dried fish and stir slowly reaching the ends of the pot. 
  • Add salt, paprika for flavor and stir.
  • Taste for seasoning.
  • Do not add any form of water because Kale has a good level of water in it. (Always stir to avoid burning your food).


  • Cover the cooking pot while the stove is set on a low heat. This allows for all the "juice" produced by each ingredients to harmonize and cook slowly from inside. 
  • After 5mins of steaming, add your chopped kale and stir.
  • Cook for about 10mins (because kale is not a soft vegetable) and your sauce is ready to be savored. 


Serving: 
  • Cut the potatoes into halves if you didn't in the beginning.
  • Place them in a clean serving bowl forming a circular shape.
  • Place the diced sweet pepper n top of each potato to bring color to it .
  • Dish the veggies sauce in the middle of the circular shape formed with the potatoes.


  • Serve with a cold orange drink or a glass of water (your choice is preferred here).
