Planwich served with homemade orange drink

"Just try new things. Don't be afraid. step out of your comfort zones and soar. all right?" - Michelle Obama. 

Those were the exact words that ran through my mind as I stepped into the kitchen to prepare dinner. I initially wanted to settle for a plate of fried plantain and eggs until the creative side of me objected hence, my decision to make a PLANWICH. "Sandwich is an item of food consisting of two pieces of bread with meat, cheese, or other filling between them, eaten as a light meal". I created this planwhich bearing that idea in mind, but with a little tweak of excitement as you are yet to discover. Well, I suppose everyone should have their favorite sandwich as mine is a tuna sandwich. What's yours? I'll really love to know. And if you happen not to love sandwiches, allow me to win your heart with my PLANWICH. 

Planwich:





Ingredients : Plantain
  • 3 - 4 plantains depending on the number of guests
  • Salt to taste

Direction: Plantain
  • Wash the ripe plantains and peel. 
  • Cut the plantains into equal halves in a horizontal position
  • Place the sliced plantains into a bowl, add a little salt and shake to mix thoroughly. 

  • Place a clean frying pan on a medium heat stove and add vegetable or olive oil enough to cover the plantains when dipped into it.
  • Once the oil starts to drizzle, gently place the sliced salted plantains into the hot oil and slightly reduce the heat to enable slow frying. This way the plantains fry from inside instead of browning without frying.
    • The very basic tip to find out if the oil is ready is to toss an already cut onion inside and once the oil sizzles then it is ready!

  • Allow the plantains to fry and turn to the other side until golden brown. 
  • Gently remove the fried plantains and place in a paper-towel covered colander to drain excess oil. 
  • Set aside to cool and get ready to prepare the filling.






Ingredients : Filling

  • One tablespoon of olive or vegetable oil.
  • One medium onions finely chopped. (if preferred or in chunks).
  • 4 sprigs of romaine hearts (The inner part of the lettuce as they are usually smaller in sizes).
  • 100g of shredded turkey (I used an already prepared baked turkey) I'll make the recipe soon :)
  • 2 sprigs of thyme leaves.
  • 1 tablespoon of oregano and rosemary spice (Fresh oregano and rosemary can also be used).
  • 1 tablespoon of paprika for reddening. 
  • 1 stock cube (chicken or beef).
  • 1 1/2 tablespoon of all purpose flour.
  • 4 habaneros or more if you love spicy food.
  • 5 sweet peppers.
  • Salt to taste.

Prep
  • Properly wash both hands.
  • Slice the onions into fine cubes.
  • Shred the turkey using your hands.
  • Slice the sweet peppers and habanero.
  • Dissolve 1 1/2 tablespoon of flour in cold water.
  • Cut the romaine hearts into a flat shape just so it balances between the plantains.



Directions: Filling
  • Set a medium sized pot on a low heat and add vegetable/olive oil. 
  • After 5 - 7 mins, gently add your finely chopped onion, sliced habanero and sweet peppers simultaneously, increase the heat and stir.
  • Add the shredded turkey, stir for about 3 mins then add your condiments (thyme, oregano, stock cube, and salt). Be careful with salt as the shredded turkey might contain a little bit.


  • Add the dissolved flour and stir.
  • Watch closely while the pot is covered to cook for 2 mins. 
  • Add paprika to redden the filling and add flavor too.
  • Stir and taste for seasoning.
  • Cook on a low heat for about 5 mins and your filling is ready!

Serving:
  • Place the plantains and the filling on a clean serving bowl.
  • Place the romaine heart (lettuce) in the middle of each plantain.
  • Using a clean spoon, scoop the filling and spread evenly on top of the romaine heart (lettuce)
  • Cover each plantain using the other part to create your mouthwatering PLANWICH!!
  • Serve with a cold home made orange drink (It would be on the blog as soon as possible)
