Plantain suya!!! Yes I made suya (open fire roasted beef) using plantains. A penny for your thought? Don't be too curious it's just plantains on skewer.
I think plantains are something that shouldn't be missing from my pantry and if they ripen I store them in the refrigerator. Every grocery store in Arlington recognizes my face from always coming to buy plantains and if they run out I ask to speak to the store manager. How dare you starve me? (That was a joke but not really a joke). Anyways lets get down to actual business. It's summer and a good time for easy and light finger foods because everyone wants to stay fit for beach time. Especially those that have worked so hard to maintain a healthy diet prior to summer. This recipe is designated for you and also the presentation screams "picnic time".
Plantain Suya!!!
Ingredients
- 3 - 4 plantains depending on the number of foodies available
- Romaine hearts (inner part of Romaine lettuce)
- 1 strawberry
- 1 or 2 Skewers (number depends on the serving)
- Salt to taste
- Wash the ripe plantains and peel.
- Cut the plantains into an oval shape.
- Place the sliced plantains into a bowl, add a little salt and shake to mix thoroughly.
- Place a clean frying pan on a medium heat stove and add vegetable or olive oil enough to cover the plantains when dipped into it.
- Once the oil starts to drizzle, gently place the sliced salted plantains into the hot oil and slightly reduce the heat to enable slow frying. This way the plantain fries from inside instead of browning without frying.
- The very basic tip to find out if the oil is ready is to toss an already cut onion inside and once the oil sizzles then it is ready!
- Allow the plantains to fry and turn to the other side until golden brown.
- Gently remove the fried plantains and place in a paper-towel covered colander to drain excess oil.
- Set aside to cool and prepare for garnishing.
Garnishing:
- Set your clean serving plate.
- Insert the romaine hearts into the skewer in an opposite direction.
- Place your fried plantains on the skewer in an opposite direction until you can no longer see the tip of the skewer.
- Cut the strawberries into tiny cubes and sprinkle around the plate.
- (Now let me explain to you why I usually do this). I am the type of individual that believes in leveraging on trends . We are in the era where everyone wants to indulge with food and also be healthy. Sometimes it's really a hard task to accomplish so I tend to always eat fruits as a guilt relief from the fat consumed off of plantains. Not only that, a combination of green romaine hearts and the red color of strawberries on a white plate makes you so hungry really quick. That's how you attract the butterflies in the tummy.
- Serve with a cold glass of cucumber infused water
- Now you can relish!
Romaine heart is gotten from the inner part of Romaine lettuce.
