Mango Sauce Noodle......


WTF - Where's The Food?

Sometimes you just get exhausted standing in front of your refrigerator looking for the perfect lunch/dinner. This time I was craving a tangy veggie noodle of some sort but I still wasn't exactly sure of what it was. Still staring at the refrigerator, I couldn't muster up anything then I decided to take a friendly walk to the grocery store. I picked up ripe mangos, spiralized sweet potato, butternut squash and beetroot and headed home to bring this idea of Mango sauce noodle to life!!! Trust me when I say it hit the spot!!! Super creamy meals always do that!!!!!

Mango Sauce Noodle.




Ingredients : Mango Sauce Noodle


  • 3 oz of spiralized  beetroot
  • 3 oz of spiralized butternut squash
  • 3 oz of spiralized sweet potato
  • 1 sprig of mint leave or any herb of your choice (Rosemary leaves, sage, cilantro etc)
  • 1 Lemon or Lime
  • 1 Ripe mango
You can buy the spiralized beetroot and it likes from a grocery store if you don't own a spiralizer yet or just want to take the easy way out like I did - I don't plan to keep you in the kitchen for a decade.


Direction: Noodle

For those who prefer preparing from scratch:
  • Spiralize the beetroot, butternut squash and sweet potato into noodles and place in a large bowl and mix.
For those who prefer to buy from the store just like I did:

  • Pour the quantity/portion of spiralized beetroot, butternut squash and sweet potato into a large bowl and mix.
Prep: mango sauce
  • Properly wash both hands.
  • Cut the mango into chunks and place in a bowl

  • Cut the lemon into equal halves and juice using a handheld lemon juice

  • Wash the mint leaves and place in a clean bowl 

Direction: Mango Sauce
  • Pour the lemon juice and mango chunks into a blender, add the mint leaves and blend thoroughly until a smooth mixture is achieved.
Serving: Mango Sauce Noodle
  • Pour the mango sauce into the noodles and mix









  • Serve with water.
  • Bon Appetit!
