Pineapple Jollof Rice w/ Fried Chicken and Fruit Plate.......... The new yum!

What do you usually do when you are bored? Nothing? I hope not. For me, I try to exercise the innovative part of me in the kitchen. It might not be a pioneering idea but I tend to do a little bit of modification. I was bored on a certain day and I decided to make the regular Jollof rice and fried chicken just because every "fine geh" (beautiful girl) deserves to eat deliciously and boy did this picture happen!!! It turned out I made PINEAPPLE JOLLOF RICE! Ingredients: 16 Ounces of Uncle Ben's long grain rice (2 cups of white rice) Tomato stew (I'll put the directions below) Chicken (I used chicken thighs) Grounded habanero pepper (quantity depends on your spice tolerance) 1 Medium onion 1 Small onion 2 Bell peppers (also used for garnishing) 1 Cup of vegetable oil 2 Knorr cubes or stock cube One sprig of fresh thyme, parsley and rosemary leaves  One cup of dried blended crayfish/shrimps 1 Tbsp of salt (each for the rice and tomato stew) One...

Would you think I'm weird if i tell you this is my first attempt eating this? Well, I grew up in the"fishy" city of PortHarcourt Rivers State and I never thought that was a thing until I met up with some Lagos folks. Anyways I figured the recipe was really easy to put together so I jumped on it and it turned out to be the best EWA AGOYIN you'd ever have until you cook yours :). Total cooking time. Everyone wants a beach body and I am aware of that. But that doesn't stop you from eating a well prepared pasta in small quantity and get your routined workout in as well. I had to say that so you don't think I'm here to make you fat. For pasta lovers, we all realize that spaghetti is too plain to not leverage on a delicious sauce. And if you do not like pasta, please try this recipe and get back to me. I promise you'd fall so deeply in PASTA. The amazing fact about this recipe is that it is easy to put together. Save Overripe Plantains by turning them to Plantain Puff Puff!

If you are the kind that buys plantain and forget them until they are overripe and almost squashy then this post is for you. Plantains are almost the love of my life so I always have them in my pantry. This one time I bought an almost ripe plantain and forgot about them until a certain day when I felt something soggy and realized it was overripe and past the frying or boiling phase. While thinking of what to do with the plantains, I decided to air them on the counter to prevent further ripening.   What to do?!! What would you think of?? Looking through my pantry and at the sight of flour and nutmeg plantain puff puff  (African Beignet) came to mind and yes I went for it. Cookie Crust Banana Ice-cream....... Just because I love bananas!

Bananas are extremely healthy and yummyyyyy. They contain several essential nutrients, and have benefits for digestion, heart health and weight loss. Bananas are among the most popular fruits on earth. Bananas contain a fair amount of fiber, as well as several antioxidants. bla bla bla.  In as much as this is not why I am here, I thought it beneficial to back up my love for bananas as they always taught me to cite my references while writing grad school paper works :) frustrating right?  SUMMER  I look at the sun and all I can think of are bananas. :) :) Always remember that the owner of this blog loves food just so I don't always surprise you with my comparisons. Summers in Virginia can always get up 80 -95 degrees Fahrenheit. (Now that is very hot!!)
